There are a lot of sugar substitutes that work even for baking. Monkfruit (sugar-like crystals) plus a few drops of sucradrop (or other similar liquids) are what works for me. Expensive, but lasts a long time. To be honest, done right, in a side by side, I can't tell the difference. Sucradrops, in cold tea, can elevate (not spike, like sugar) my blood sugar. Oddly, though, not when baked, cooked, or in hot drinks. Ymmv.
I am lucky. I have access to a dairy, for fresh raw goods. Even butter and sour cream. Been with them for years now. Still... worth a shot. And good to have options.
