Ingredients-
2 T butter
1 Onion chopped
2 Garlic cloves minced
1 lb baby Spinach roughly chopped
1 cup heavy or whipping cream
1/2 cup sour cream
1 cup milk mixed w/1 T cornstarch
1/2 cup grated Parmesan
5 oz. Artichoke hearts chopped
1 tsp lemon juice
1 lb Pasta
1 cup grated Mozzarella
Pre-heat oven 350
Saute' onion and garlic in butter
Add spinach, salt & pepper
Pour cream, sour cream, milk & cornstarch
into pan, simmer 5 min.
Add artichokes, parmesan, lemon juice, simmer 5 min.
Cook pasta, drain & add to sauce
Transfer to baking dish, top with Mozzarella
Bake 20-25 min.
(Without the pasta, the sauce is wonderful
for dipping or drizzling on nachos.)
This DOES sound yummy. I'm gonna try it.
